It&#8217;s a round crusty cake made with viennoiserie dough containing layers of butter and sugar folded in similar to a puff pastry. Ana Ortega, Director of Tea Fort\u00e9 in Mexico saw these pastries on a visit to France and then a few years later at Dominique Ansel Bakery in NYC.
